Nose:
Aromas of blackberry, cranberry, and dark cherry intermingle with dried herbs and cracked black pepper. There's a subtle savory undertone that adds depth and complexity.
Palate:
The palate is smooth yet vibrant, showcasing juicy black fruit flavors supported by silky tannins. Gentle oak notes add structure, while a peppery spice carries through to the finish, leaving a lingering warmth.
Ageing Potential:
Ready to enjoy now, but will reward 5-7 years of cellaring. Expect the fruit to soften and evolve into more earthy, gamey flavors over time.
Food Pairings:
Pan-seared pork tenderloin, venison fillet, or a traditional South African braai with boerewors and lamb chops. The wine's spice and fruit balance makes it versatile with grilled meats.
Moment Pairing:
A convivial choice for outdoor gatherings, campfires, or hearty home-cooked meals shared with friends.
Vineyards & Harvest:
Grapes come from west-facing slopes at 100-200m elevation with decomposed granite soils. The trellised vines are managed for balanced yields, producing fruit with concentration and freshness.
Vinification:
Each cultivar was fermented separately. About 50% of the Shiraz was fermented with 30% whole bunches for added perfume and spice. The wines were aged 12 months in 500L French oak barrels, 20% new, before blending.
