Nose:
The bouquet is layered and complex, opening with intense cassis and blackberry fruit. Aromas of wet tobacco leaf and cedar are woven with notes of licorice, graphite, and a subtle allspice spice, giving the wine both depth and elegance.
Palate:
The palate is full-bodied and structured, showcasing rich blackcurrant and dark plum flavors at the core. Firm yet refined tannins provide a solid backbone, while the finish lingers with graphite and spice, suggesting a wine that will gain further refinement with age.
Ageing Potential:
Crafted for longevity, this wine will reward 8-10 years of careful cellaring. Expect tertiary notes of cigar box, cedar, and savory herbs to emerge while still maintaining its fruit density.
Food Pairings:
A natural match with classic cuts of beef such as rib-eye or fillet mignon with Bordelaise sauce. It also complements slow-cooked lamb shank and, for a local touch, oxtail potjie where the richness of the dish meets the wine's firm structure.
Moment Pairing:
Perfect for celebratory dinners, milestone occasions, or an intimate winter evening by the fireplace.
Vineyards & Harvest:
Cabernet Sauvignon comes from a southwest-facing Polkadraai vineyard at 150-200m elevation, contributing aromatic intensity and fruit richness. Petit Verdot is sourced from rocky clay soils in Banhoek, adding weight and tannic finesse. Grapes were harvested at optimal ripeness and carefully sorted for quality.
Vinification:
Whole berry vinification took place in open-top fermenters with regular pump-overs to ensure gentle extraction. Each varietal was matured separately for 18 months in French oak barriques, 50% new, before blending. The oak softens the tannins and introduces subtle cedar notes, enhancing the structure and ageing capacity of the wine.
