Nose:
The bouquet opens with a burst of black and white pepper, lifted by subtle red fruit tones and a dusting of warm allspice. Gentle oak notes frame the aromatics, adding nuance without overpowering the spice-led core.
Palate:
The palate is refined and textural, showcasing dark berry fruit woven with savoury spice. Bright acidity lifts the mid-palate, while ripe, rounded tannins provide structure and length. A touch of plushness balances the dryness on the finish, creating a wine that is both robust and elegant.
Ageing Potential:
Crafted for longevity, this Rhône-style blend will reward 6-8 years of careful cellaring. Expect the pepper and spice to deepen into earthy, gamey notes while maintaining its freshness and balance.
Food Pairings:
A natural partner for slow-cooked winter dishes such as Boeuf Bourguignon, venison ragù, or pulled pork. The wine's savoury core complements rich, hearty flavours.
Moment Pairing:
Perfect for a fireside winter evening - the kind where conversation lingers as long as the wine in the glass.
Vineyards & Harvest:
The Shiraz and Viognier were co-fermented with 30% whole cluster carbonic maceration to accentuate fragrance and spice. Mourvèdre was harvested ripe to provide softness and rounded tannins, completing the blend's layered structure.
Vinification:
Each component was vinified with minimal intervention, then matured for 24 months in French oak barriques, 15% of which were new. Natural malolactic fermentation occurred in barrel, before light filtration and bottling.
