Rooster Rojo A ejo is produced by using only 100% Blue Weber agave. It comes from Los altos de Jalisco. The pi as are cut into parts and then cooked with steam for 10 hours. Special yeasts are then inoculated to start the fermentation from the juice. It lasts for up to 72 hours, after which the liquid is distilled. Double pot distillation is done in stainless steel pots. The filtration is done with water that was filtered through Mexican silver. This makes the drink soft and smooth. The tequila is then matured in big 200 litter used American oak bourbon casks for more than 12 months.
Aroma: It has a developed aroma with beautiful notes of oak, chocolate, tobacco and coffee.
Taste: On the palate, pronounced flavours of oak, vanilla, caramel and roasted agave are present. It has a rich, long and smooth finish with some vanilla and oak present for minutes.
