The sites on which the selected vineyardsaregrown are generally on the coolersoutheast-facingslopeswith rows running from north-west to south-east in order to maximise the effect of the coolingmaritime airflow during the hot summer ripening months.All the vinesaretrellisedandgrowpredominantlyinsoilsof decomposed granite,althoughsome Table Mountain sandstone andshale arealso foundon someof the slopes.The vinesaregraftedonto nematode-resistant rootstocksandare pruned andtrained in awaythat optimisesyieldandqualityof the fruit.
