Nose:
Rich and classic. Aromas of blackcurrant, blackberry and dark plum combine with cedar, graphite, and a hint of tobacco leaf. A subtle earthy note adds depth, showing early tertiary complexity.
Palate:
Full-bodied yet elegant, with dense dark fruit, firm but refined tannins, and a backbone of acidity giving freshness. Flavours of blackcurrant, dark cherry, graphite and dark chocolate develop into a long, structured finish with oak spice and mineral notes.
Ageing Potential:
Strong ageing potential - 8-12 years, with tertiary notes of leather, cigar box, and dried herbs gradually emerging.
Food Pairings:
Prime rib-eye, rosemary lamb roast, venison stew, or rich tomato-based casseroles.
Moment Pairing:
Milestone dinners, celebrations, or fire-side evenings where depth and character matter.
Vineyards & Harvest:
Vines planted on deep granite-derived soils on Franschhoek's slopes, benefiting from cool mountain breezes - slow ripening ensures flavour concentration and structural balance.
Vinification:
Fermented in open-top fermenters with careful pump-overs to extract structure gently. Aged in French oak barrels for 14-18 months (some new wood), balancing power with polish.
