Tasting Notes:
A nose with inviting scents of yellow apple, brioche and a fragrant lime blossom, leading to the palate, which reinforces the lively acidity. The nose and palate combine seamlessly with delicate notes of vanilla spice and buttery brioche, highlighting the layered characteristic of the oak.

Food Pairings:
An aromatic Cape Malay seafood curry would pair well with this wine, due to the dish's moderate heat component and the subtle sweetness. The creamy texture of the dish will pair harmoniously with the acidity of the wine.

This wine would also pair well with Grilled Kingklip with a lemon butter sauce. The crisp acidity and integrated oak undertones enhance the buttery richness of the dish and add freshness to the fish.

Vineyards and harvest:
The vineyards are located in the heart of the Golden Triangle on the Helderberg side of Stellenbosch, with high-potential soils and optimal fruit ripening.

This region has a significant cooling effect from the ocean breeze, which allows for the grapes to ripen evenly and slowly. "Koffieklip" soil that contains a clay sub-soil, combines with plant material that maintains the virus-free status, allowing the wine to show valuable fruit expression and pure quality.

Vinification:
The picking occurs early in the morning to ensure the grapes are kept cool, retaining the fresh acidity of the grapes. The timing for picking each vineyard is independent to highlight the unique components each vineyard block adds to the wine. The grapes are immediately whole-bunch pressed to ensure a lower extraction and better acidity. The juice is allowed to settle, followed by fermentation in 225L and 300L French oak. Each individual picking was assigned a specific yeast strain to complement the vineyard block characteristics and enhance the final blend. The wine is finally matured in French oak for 10 months with extended lees ageing for 9 months.

Vintage subject to the latest available vintage from the winery.
