Tasting Notes:
The Cavalli Cabernet Sauvignon is a pristine exhibition of the Stellenbosch terroir. The nose immediately reveals brooding aromas of aged tobacco, ripe dark fruits, and cocoa. The palate reveals a generous texture, oak spice, and juicy plum. The wine ultimately delivers a mouthfeel of elegance and structure, all driven by silky tannins and energetic acidity.

Food Pairings:
A home-cooked wild mushroom risotto with Parmesan would contrast with and beautifully complement the characteristics of the Cavalli Cabernet Sauvignon, thanks to the nutty richness of the Parmesan and the umami depth of the mushrooms, both of which would be illuminated by the wine's pronounced dark berry profile.
If you prefer a local flavour, Braaied Sosaties layered with onions, peppers and dried apricots would balance and complement the wine's subtle spice and structured tannins.

Vineyards and harvest:
The vineyards are located in the heart of the Golden Triangle on the Helderberg side of Stellenbosch, with high-potential soils and optimal fruit ripening.

This region has a significant cooling effect from the ocean breeze, which allows for the grapes to ripen evenly and slowly. "Koffieklip" soil that contains a clay sub-soil, combines with plant material that maintains the virus-free status, allowing the wine to show valuable fruit expression and pure quality.

Vinification:
The Cabernet Sauvignon grapes were hand-picked and delivered to the cellar for sorting and processing. The different batches continued fermentation in stainless steel tanks, receiving pumpovers daily. The pump-overs are gentle and therefore less likely to lead to excessive tannin extraction. This is followed by a process of post-fermentation extended skin contact to support the ageability, colour stability and overall flavour profile of the wine. The 225L French oak barriques were used for maturation for 2 years, with 30% being first fill.

Vintage subject to the latest available vintage from the winery.
