A vivid infusion of dried butterfly pea flowers, traditionally known across South East Asia by names such as "Blue tea," "Asian pigeon wings" and "nam dok anchan" in Thai. When steeped in hot water, the blossoms release their signature sapphire hue, transforming your cup into a crystalline pool of colour. The flavour profile is unexpectedly similar to green tea, with gentle earthy and woody undertones that invite calm and clarity.
Part of this flower's allure lies in its playful chemistry. A squeeze of lemon or other acidic medium triggers an instant metamorphosis, shifting the deep blue liquor to a soft rose tint. This captivating colour change has made butterfly pea flower a favourite in creative cocktails, mocktails and special tea blends, where both visual drama and taste are key.
Beyond its stunning appearance, butterfly pea flower is valued for its natural antioxidants that help support skin health and gentle cognitive clarity. It is caffeine free and naturally hydrating, making it an elegant choice for moments when you seek visual delight and mindful refreshment.
Serving suggestion:
We recommend brewing herbal infusion with water at around 100 degrees Celsius. Steep the herbs for approximately 3 minutes, then taste to see if the strength suits your preference. If you desire a stronger brew, you may steep it for another minute or two. Use a teapot with an infuser for best results. If a teapot is not available, an infuser ball, infuser cup, or a fine mesh strainer will also work well. For each serving, use about 3 to 4 grams of herbs, or roughly one teaspoon. This infusion may be steeped a second time; simply extend the brewing time to draw out the remaining flavour.
